A Bespoke Floral Cloud Installation for Sussex Restaurant’s Chef’s Table, London

A few weeks ago, I had the pleasure of creating a bespoke floral installation for the Chef’s Table at Sussex Restaurant in Soho, London, a truly special dining space where guests can enjoy an intimate culinary experience surrounded by exceptional food, fine wines, and sophisticated interiors.

The Sussex team wanted to enhance the atmosphere of their private dining space, adding a visual element that would complement their Local & Wild ethos, celebrating British produce, artisanship, and the natural beauty of the seasons. Together, we envisioned a floral cloud installation that would float gracefully above the table, offering guests something beautiful to admire while they dine.

Crafted Sustainably, Inspired by Nature

True to my studio’s values, the installation was created using sustainable mechanics, free from floral foam, and designed to be as eco-conscious as it was elegant. I selected a mix of naturally dried flowers and British-grown varieties, curated in a soft, textural palette to gently lift the deep tones of the room while maintaining a warm, immersive feel.

Every stem was chosen for its texture and tone, from delicate seed heads, florals and foliage, creating a cloud-like composition that feels organic in structure. The result is an installation that sits harmoniously within the space, inviting guests to look up and pause, appreciating a moment of nature even in the heart of the city.

Supporting British Craft and Sustainable Design

This project beautifully reflects the synergy between culinary artistry and floral design, where craftsmanship, sustainability, and sensory experience intertwine.
